I absolutely love this versatile pasta salad. Not only is this delicious GF/DF/SF pasta salad healthier, it is a great way to get those 7-9 vegetables servings a day into your diet. You can serve this up as a meatless main dish, or a side companion with a favorite fall soup or sandwich. Don’t sweat it if you don’t have all the recommended vegetable ingredients in the recipe, just use what you have on hand, or what’s in season. I promise, it will still turn out great.
The ingredients as pictured above are: broccoli, carrots, red bell pepper, cucumbers and onions. It’s what I had on hand yesterday. Feel free to cut the mayo in half and add more vinegar to cut the calories. If you’re sugar-free switch out the honey or sugar for stevia. I love the new Trader Joe’s Organic brown rice and quinoa Fusilli (spiral) pasta, it cooks in less than 10 minutes. Seriously, you can have this entire salad cooked, chopped and dressed in 15 minutes.
Healthier Pasta Salad
3 cups spiral GF pasta (I used 1/2 Trader Joe’s Organic Brown rice & Quinoa 16oz package)
3/4 cup broccoli florets
3/4 cup cauliflower florets
1/2 cup red onion, sliced
1/2 cup thinly sliced carrots
1/2 cup red bell pepper, chopped
1/2 cup chopped green bell pepper
1/2 cup chopped celery and/or cucumber
1/4 to 1/2 cup organic mayonnaise (Trader Joe’s is a good choice)
1/4 cup sunflower seeds
1/4 cup distilled white or rice vinegar
2 TBS honey or sugar (stevia is also okay)
pepper to taste
Cook GF pasta according to package directions. (Careful not to over cook it, it needs to be al dente) Drain and rinse pasta under cold water. The Trader Joe’s organic brown rice & quinoa cooked in just 10 minutes. Chop all vegetables and make dressing while the pasta is cooking.
Place rinsed and drained pasta in a large serving bowl, add the all the vegetables and toss.
Combine the organic mayonnaise, vinegar and honey/sugar together, whisk until smooth. Pour over salad and mix well. Season to taste with pepper and sprinkle with sunflower seeds and serve.
